Let’s Braai recipes

Dan’s Butterflied Chicken:

  1. Mix some oil, salt, pepper, paprika & garlic
  2. Brush this all over the skin of the chicken.
  3. Leave it to marinate for an hour or so.

To cook on the BBQ, I cook the chicken for a few minutes (no more than 5 to 10 min) in the centre of the BBQ; then I cook it on the edges of the BBQ on a gentler heat and turn regularly. I love the crispy skin of a butterflied chicken.

Chicken kebabs

I also enjoy doing chicken kebabs this way (Butterflied Chicken) and add some lemon to the seasoning.

Braaibroodjies (BBQ-breads) (the ultimate pre-BBQ dish!) (makes 4)

Use thick white bread slices and stack slices of cheddar, tomato, onions and chutney (preferably Mrs Balls – but any will do) in-between.

Ingredients

  • 8 slices white bread (thick)
  • 4 tbsp. (2 oz.) unsalted butter, melted
  • 2 cups grated cheddar cheese (8 1/2 oz.)
  • 1 large tomato, thinly sliced
  • 12 white onion, very thinly sliced
  • Salt and pepper
  • 3 tbsp. chutney

Instructions

  1. Ensure your braai grill is a medium-high heat.
  2. Brush one side of each slice of bread with melted butter.
  3. Lay bread, buttered side down, on a work surface. Divide the cheese between 4 slices, top with sliced tomato and onion and season with salt and pepper. Spread the chutney over the remaining slices of bread, and place them chutney side down on top of the filling.
  • Turn ‘broodjies’ once until bread is toasted and cheese is gooey and melted.
  • Enjoy!
